Our apple orchard is growing strong, setting the stage for our first batches of hard and soft apple cider, expected to be available in 2027. We’ve been planting and tending a mix of heirloom and modern apple varieties—chosen for flavor, resilience, pollinator support, and ability to reduce the need for chemical inputs—and the trees are maturing beautifully.

As the apples come in, we’re experimenting with small‑batch blends and fermentation styles to highlight the character of each variety and mix. Expect a mix of crisp, refreshing soft cider and complex, dry hard cider, all made right here on the farm.

Apple varieties include Esopus Spitzenburg, Ashmead’s Kernel, Black Oxford, Liberty, Roxbury Russet, Northern Spy, and Honeycrisp.
